Why Unsifted Basic Blend?
What is the difference between your Basic Blend and regular hard white wheat?
This is an extremely common question so we wanted to answer it here too.
This question is a little bit complex, because hard white wheat berries are actually a class of wheat. There are six classes of wheat and it's one of them. Within each class there are hundreds to thousands of different varieties. A variety is just a different seed. Think of when you plant your garden- there are many many different varieties of cucumbers. Some are for pickles, some are large, some are burpless, some are non-GMO, etc. Each one serving a slightly different purpose and meeting a slightly different goal. It is the same for whole grains like wheat.
Each specific variety has a different yield in field for the farmer, moisture content, protein content, ash content, fiber ratio, etc. Then after the farmer has harvested the grain the next process also varies a lot regarding who cleans and how well the grains are cleaned which affects the overall quality.
Why does this matter to you?
It affects baking performance, taste, and quality.
Wheat is sort of like wine: using a hard white wheat is like saying you drink white wine, but now which one. Depending on the season, the type of grape, the method of processing, etc. they will all taste slightly different. There can be a lot of variation across the varieties.
The variation in flavor and baking performance is one of the main reasons we developed our blends- we wanted our customers to have more consistent baking outcomes and higher quality in terms of texture, hydration, and loftiness. No grittiness with Unsifted!
Our Basic Blend is more nutritionally diverse than hard white wheat, including fiber and protein. The blend also enhances the softness and flexibility of yeasted loaves, and stays fresh longer due to the targeted moisture content.

In terms of flavor, that's certainly a personal preference that can vary. Our Basic Blend has more flavor than most hard white wheat varieties (which we like for yeasted breads). Hard white tends to be more bland or non-flavored, which isn't a bad thing it's just totally a different flavor profile.
