Cinnamon Swirl Cake
Our Cinnamon Swirl Coffee Cake is a simple breakfast treat that packs in the fiber and nutrients first thing in the morning without sacrificing an ounce of deliciousness. We use our Dessert Blend that includes four whole grains - wheat berries, barley, and the ancient grain spelt- to get our whole grain diversification off to a great start early. However, this cake would also be a delicious brunch addition or after dinner dessert. Truly, why limit yourself to just breakfast?
This recipe was born out of my oldest boy's love for cake at breakfast. He is elated anytime that is an option....a boy after my own heart! It's tender, sweet, refrigerates well to serve the next day or for snack, and has a wonderful crumb. I'm pretty sure we both had three pieces the first time, because we think its just so good. Unsifted Cinnamon Swirl Cake

honey (sub: ½ cup sugar) |
1 ½ cups |
milk |
2 tsp |

Filling: |

½ cup |
unsalted butter, softened |
⅔ cup |
brown sugar |
2 Tbsp |
unsifted flour (set aside from cake batter) |
1 Tbsp |
ground cinnamon |
¼ tsp |
ground nutmeg |
Glaze: |
|
1 cup |
powdered sugar |
2 Tbsp |
milk (sub: water) |
1 tsp |
vanilla extract |
Instructions
1. Mill the fresh flour
- Preheat oven to 350F
- Set WonderMill® dial to “Pastry”
- Mill 1 ¾ cups Dessert Blend
- Set aside 2 Tbsp unsifted flour (for filling)
2. Combine dry ingredients in mixing bowl
- Add the remaining unsifted flour (just under 3 cups)
- Add 4 tsp baking powder
- Add ½ tsp salt
- Stir to thoroughly combine
3. Add wet ingredients
Pro Tip: Measure the melted butter into the measuring cup first, then add honey to the same measuring cup. This will make the honey easier to pour out.
- Add ½ cup melted butter
- Add ½ cup honey
- Add 1 ½ cups milk
- Add 2 tsp vanilla
- Add 2 large eggs
- Stir until just combined (do not overmix)
- Lightly grease baking pan
- Pour batter into greased pan and spread evenly
4. Mix filling
- To the emptied bowl, add ½ cup softened butter
- Add ⅔ cup brown sugar
- Add remaining 2 Tbsp unsifted flour
- Add 1 Tbsp cinnamon
- Add ¼ tsp nutmeg
- Optional: Add filling mix-ins (see mix-ins to the right)
- Stir with a spoon to thoroughly combine
5. Swirl filling into batter + Bake
- Drop filling evenly across top of batter using a spoon
- Drag a butter knife through the batter + filling to swirl
- Bake at 350F for 30-35 minutes (200F internal temp.)
6. Mix glaze + Drizzle (optional)
Pro Tip: See right for glaze variations. Variation ingredients are stand alone and should not be added to the standard glaze ingredients.
- In a clean bowl, add 1 cup powdered sugar
- Add 2 Tbsp milk
- Add 1 tsp vanilla
- Stir until well combined
- Drizzle glaze on top of warm cinnamon cake
CRUMBLE TOPPING VARIATION
In Step 4, add the following:
- 1 cup Dessert Blend on “Pastry”
- Pinch of salt
In Step 5, sprinkle the filling evenly on top of the batter before baking (without swirling)
- Bake at 350F for 40-55 minutes (200F internal temp.)
